Potato Harvest


For all those that have never lived in Idaho, they have an annual potato harvest. For the kids in Rexburg and in the surrounding areas they get a week to a week and a half off of school. Isn't that crazy?! I don't mind so much because I am reaping the benefits. At the school I have my practicum class at one teacher was giving away potatoes. So I got myself a big bag of fresh Idaho potatoes. I love the potato becaus it is so versatile. You can have hash borwns, mash potatoes, potato soup, potato bread, potato casserole. . .

We have potatoes a lot because they are so cheap here. JJ loves to make his "fry-fries" (french fries).
